Eating our Way Through Basque Country #ReadySetROXY


When the competition was put on standby due to small conditions, we spent the second day of the ROXY Pro France in beautiful Basque country, a region in the southwest of France known for its chocolate, cheese and wine!

Our first stop led us to Bayonne, a very small town that is known for its chocolate. We visited l’Atelier du Chocolat, a chocolate workshop where we saw how caco beans were transformed to one of our all time-favorite desserts: rich chocolate!

At the end of the visit, we tasted dozens of different chocolates all made on site at l’Atelier du Chocolat. Our favorite was the caramel chocolate – it was unbelievable how rich and creamy it was! We also tried chocolate with Espelette pepper (Espelette is a village in Basque country famous for its pepper), chocolate with Pasoa (local wine made with passion fruits), chocolate with Armagnac (French liquor) and too many more types of chocolate to count!

After we filled up on chocolate, we made just a little more room to try a traditional dessert of this region, called Basque cake. We stopped in Bidart, another very small town close to Biarritz that is also a renown surf spot. We visited a basque Moulin named Bassilour, where basque cakes named "gateau basque" are made. These delicious cakes are similar to a pie and are filled with fresh cream or cherries and made by scratch in a centuries-old castle.

The tools required to make the cakes are more than 1700 years old! We watched how it took corn and transformed it into flour, using a local stream as the only power source to run the machines. We couldn’t get over the beauty of the Moulin and the surrounding creek – and the basque cakes were pretty amazing as well!

Exploring Basque country left us pretty full – we are giving ourselves a full day off from eating any more desserts! Or at least we can try!
